  • 4 cups low-sodium vegetable or chicken broth
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • ½ tsp smoked paprika
  • ¼ tsp turmeric (detox-friendly, anti-inflammatory)
  • Salt & black pepper, to taste
  • Juice of 1 lime
  • 2 tbsp chopped fresh cilantro

  1. Sauté vegetables:
    Heat olive oil in a large pot over medium heat. Add onion, garlic, celery, carrot, and bell pepper. Sauté for 5–6 minutes, until softened.
  2. Add spices:
    Stir in cumin, chili powder, smoked paprika, and turmeric. Cook for 30 seconds to bloom the spices.
  3. Add broth & other ingredients:
    Add diced tomatoes, black beans, corn, zucchini, and broth. Stir well.
  4. Simmer:
    Bring to a boil, then reduce heat and simmer 20–25 minutes, until vegetables are tender and flavors meld.
  5. Finish:
    Stir in lime juice and fresh cilantro. Taste and adjust seasoning.
  6. Serve:
    Ladle into bowls and top with optional garnishes — avocado slices, extra lime, or a sprinkle of chili flakes.
