🥒 Ingredients
- 1 medium zucchini, grated
- 3–4 tbsp oatmeal (quick oats or rolled oats)
- 1 tbsp chopped green onion (optional)
- Salt and pepper to taste
- 1 tbsp nutritional yeast or vegan cheese (optional for extra flavor)
- A pinch of turmeric or paprika (for color & spice)

- Prepare zucchini:
Grate the zucchini and squeeze out all excess water using a kitchen towel. - Mix the batter:
In a bowl, combine grated zucchini, oats, seasoning, and any extras you like (herbs, garlic powder, etc.). Let the mixture rest for 5–10 minutes until oats absorb moisture. - Shape & bake:
Form the mixture into stick shapes (or patties). Place on a parchment-lined baking tray. - Bake or air-fry:
- Bake at 375°F (190°C) for 20–25 minutes, flipping halfway through.
- OR air-fry at 360°F (180°C) for 12–15 minutes until golden and crisp.

Serve warm with your favorite vegan dipping sauce — marinara, hummus, or cashew cheese are all perfect choices!
