My family is obsessed with these! Just 1 zucchini and a cup of oats, and you get a golden, crispy, healthy snack that’s impossible to stop eating. These are vegan, gluten-free, and oil-free — and yes, we eat them almost every day! 🌱


🥒 Ingredients

  • 1 medium zucchini, grated
  • 3–4 tbsp oatmeal (quick oats or rolled oats)
  • 1 tbsp chopped green onion (optional)
  • Salt and pepper to taste
  • 1 tbsp nutritional yeast or vegan cheese (optional for extra flavor)
  • A pinch of turmeric or paprika (for color & spice)

👩‍🍳 Instructions

  1. Prepare zucchini:
    Grate the zucchini and squeeze out all excess water using a kitchen towel.
  2. Mix the batter:
    In a bowl, combine grated zucchini, oats, seasoning, and any extras you like (herbs, garlic powder, etc.). Let the mixture rest for 5–10 minutes until oats absorb moisture.
  3. Shape & bake:
    Form the mixture into stick shapes (or patties). Place on a parchment-lined baking tray.
  4. Bake or air-fry:
    • Bake at 375°F (190°C) for 20–25 minutes, flipping halfway through.
    • OR air-fry at 360°F (180°C) for 12–15 minutes until golden and crisp.
  5. Serve:
    Serve warm with your favorite vegan dipping sauce — marinara, hummus, or cashew cheese are all perfect choices!

💡 Tips

  • Add grated carrot for color and sweetness.
  • Want them extra crispy? Brush lightly with olive oil before baking.
  • Store leftovers in the fridge and reheat in an air fryer to bring back the crunch!
