Ingredients:
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsalted butter, softened
3/4 cup granulated sugar
2 large eggs
1/2 cup Greek yogurt
Zest of 1 lemon
2 tablespoons fresh lemon juice
1 cup fresh blueberries
Confectioners’ sugar, for dusting (optional)
Instructions:
Preheat your air fryer to 160°C (320°F) and grease a loaf pan that fits comfortably inside your air fryer basket.
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
In a separate large bowl, cream together the softened butter and granulated sugar until light and fluffy.
Beat in the eggs, one at a time, until well combined. Add the Greek yogurt, lemon zest, and lemon juice, and mix until smooth.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
Gently fold in the fresh blueberries until evenly distributed throughout the batter.
Pour the batter into the prepared loaf pan, spreading it out evenly with a spatula.
Carefully place the loaf pan into the preheated air fryer basket and bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
