KETO RANCH MEATBALLS
Ingredients (makes 20–24 meatballs)
Meatball Mix:
- 1 lb ground beef (80/20 works best)
- ½ lb ground pork (or use all beef)
- 1 large egg
- ½ cup finely crushed pork rinds (keto breadcrumb)
- ½ cup shredded cheddar OR mozzarella
- 3 tbsp dry ranch seasoning (homemade or store-bought, sugar-free)
- 1 tsp garlic powder
- ½ tsp onion powder
- ½ tsp salt
- ½ tsp black pepper
- 2 tbsp chopped parsley (optional)
For Cooking:
- 1 tbsp olive oil (for pan sear)
or use the oven / air fryer method below.
INSTRUCTIONS
1. Mix the Meatballs
- In a large bowl, combine:
- ground beef
- ground pork
- egg
- crushed pork rinds
- cheese
- ranch seasoning
- garlic & onion powder
- salt & pepper
- parsley
- Mix gently with your hands until just combined.
- Roll into 1–1.5 inch meatballs.
3 Cooking Options
A) Pan-Fry (best flavor!)
- Heat olive oil in a skillet over medium heat.
- Add meatballs and cook 8–10 minutes, turning to brown all sides.
- Cover for the last 2–3 minutes to finish cooking through.
B) Oven Baked
- Preheat oven to 400°F (200°C).
- Place meatballs on a parchment-lined baking sheet.
- Bake 18–20 minutes, until golden and cooked through.
C) Air Fryer
- Preheat air fryer to 380°F (193°C).
- Air fry 10–12 minutes, shaking halfway.
