KETO CAULIFLOWER MAC & CHEESE
Ingredients (4 servings)
Cauliflower Base:
- 1 large head cauliflower, cut into small “mac-sized” florets
- Salt (for boiling)
Cheese Sauce:
- 2 tbsp butter
- 2 oz cream cheese
- ½ cup heavy cream
- 1 cup shredded sharp cheddar
- ½ cup shredded mozzarella (or more cheddar)
- ½ tsp garlic powder
- ½ tsp onion powder
- ¼ tsp paprika
- Salt & pepper to taste
Optional Topping:
- ¼ cup grated Parmesan
- 2 tbsp crushed pork rinds for a crunchy top
- 1 tbsp melted butter
INSTRUCTIONS
1. Cook the Cauliflower
- Bring a pot of salted water to a boil.
- Add cauliflower florets and cook 5–6 minutes, until just tender but not mushy.
- Drain well and pat dry with paper towels — very important so the sauce stays thick!
2. Make the Keto Cheese Sauce
- In a skillet, melt butter over medium heat.
- Add cream cheese and whisk until smooth.
- Pour in heavy cream and cook 2–3 minutes until slightly thickened.
- Stir in cheddar and mozzarella until melted and creamy.
- Add garlic powder, onion powder, paprika, salt & pepper.
3. Combine
- Add the drained cauliflower to the cheese sauce.
- Stir gently to coat every piece.
4. Optional Baked Version
If you want a golden crispy top:
- Pour cauliflower mac into a baking dish.
- Mix Parmesan + crushed pork rinds + melted butter.
- Sprinkle on top.
- Bake at 425°F (220°C) for 10–12 minutes until golden and bubbly.
