KETO CAULIFLOWER MAC & CHEESE

Here is a creamy, cheesy, ultra-comforting Keto Cauliflower Mac & Cheese — the closest low-carb version to real mac and cheese you’ll ever taste!


KETO CAULIFLOWER MAC & CHEESE

Ingredients (4 servings)

Cauliflower Base:

  • 1 large head cauliflower, cut into small “mac-sized” florets
  • Salt (for boiling)

Cheese Sauce:

  • 2 tbsp butter
  • 2 oz cream cheese
  • ½ cup heavy cream
  • 1 cup shredded sharp cheddar
  • ½ cup shredded mozzarella (or more cheddar)
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp paprika
  • Salt & pepper to taste

Optional Topping:

  • ¼ cup grated Parmesan
  • 2 tbsp crushed pork rinds for a crunchy top
  • 1 tbsp melted butter

INSTRUCTIONS

1. Cook the Cauliflower

  1. Bring a pot of salted water to a boil.
  2. Add cauliflower florets and cook 5–6 minutes, until just tender but not mushy.
  3. Drain well and pat dry with paper towels — very important so the sauce stays thick!

2. Make the Keto Cheese Sauce

  1. In a skillet, melt butter over medium heat.
  2. Add cream cheese and whisk until smooth.
  3. Pour in heavy cream and cook 2–3 minutes until slightly thickened.
  4. Stir in cheddar and mozzarella until melted and creamy.
  5. Add garlic powder, onion powder, paprika, salt & pepper.

3. Combine

  • Add the drained cauliflower to the cheese sauce.
  • Stir gently to coat every piece.

4. Optional Baked Version

If you want a golden crispy top:

  1. Pour cauliflower mac into a baking dish.
  2. Mix Parmesan + crushed pork rinds + melted butter.
  3. Sprinkle on top.
  4. Bake at 425°F (220°C) for 10–12 minutes until golden and bubbly.
