🧀 Philly Cheese Steak Quesadillas

⭐ Ingredients (Makes 4 quesadillas)

Steak Filling

  • 1 lb thinly sliced steak
    (ribeye is best — or use shaved beef, sirloin, or leftover steak)
  • 1 tbsp oil or butter
  • 1 onion, thinly sliced
  • 1 green bell pepper, thinly sliced
  • Optional: ½ cup sliced mushrooms
  • Salt & pepper
  • ½ tsp garlic powder
  • ½ tsp paprika

Quesadillas

  • 4 large flour tortillas
  • 2 cups shredded provolone or mozzarella
    (Provolone is classic Philly flavor)
  • Optional: a little American cheese for extra melt
  • Butter or oil for crisping the tortillas

🔥 Instructions

1. Cook the veggies

  • Heat a skillet with a little oil.
  • Add onions + peppers (and mushrooms if using).
  • Cook until soft, caramelized, and lightly browned (about 8–10 minutes).
  • Remove from skillet.

2. Cook the steak

  • Add a little more oil/butter.
  • Add the shaved steak.
  • Season with salt, pepper, garlic powder, paprika.
  • Cook quickly over medium-high heat until browned (2–4 minutes).
  • Mix the veggies back into the steak.
  • Turn off heat.

3. Assemble quesadillas

  • Heat a clean skillet with a little butter.
  • Add a tortilla.
  • Sprinkle cheese on half the tortilla, add the steak mixture, and top with more cheese.
  • Fold the tortilla over.

4. Cook

  • Cook until the tortilla is golden and crispy, then flip.
  • Cook the other side until cheese is fully melted.

  • Hot sauce

• Cheesy Garlic Version: add garlic butter inside
