π Smash Burgers with Baconnaise Sauce
β Ingredients (2β4 burgers)
For the Burgers
- 1 lb ground beef (80/20 for juicy burgers)
- Salt & black pepper
- 4 slices cheddar or American cheese
- 2β4 burger buns, toasted
- Optional toppings: sliced pickles, onions, shredded lettuce, tomato
For the Baconnaise Sauce
- Β½ cup mayonnaise
- 2 tbsp bacon grease (from cooked bacon)
- 2 strips cooked crispy bacon, finely minced
- 1 tsp Dijon mustard
- 1 tsp lemon juice or pickle juice
- Β½ tsp smoked paprika
- Β½ tsp garlic powder
- Salt & pepper to taste
π₯ Make the Baconnaise Sauce
- Mix mayo + bacon grease until smooth.
- Add minced bacon, Dijon, lemon/pickle juice, paprika, garlic powder, salt, pepper.
- Stir and refrigerate (it thickens and gets even better!).
π₯ How to Make Smash Burgers
(Restaurant-style crispy edges!)
- Form loose balls
- Roll the beef into 2β4 loose balls (donβt pack tight!).
- Season lightly with salt & pepper.
- Heat your skillet/griddle
- Use cast iron if possible.
- Heat on high until smoking hot.
- Smash immediately
- Place 1 beef ball on the skillet.
- Cover with parchment and smash hard with a spatula or burger press until very thin.
- Season again with salt & pepper.
- Let it crisp
- Donβt touch it. Let the edges get brown and lacey.
- About 60β90 seconds.
- Flip & cheese
- Flip quickly.
- Add cheese immediately.
- Cook another 30β45 seconds.
- Toast your buns
- Lightly butter buns and toast until golden.
π Assemble
- Slather buns with Baconnaise
- Add burger patty
- Top with pickles, onions, or lettuce
- Add more Baconnaise if you want (you do π)
- Close and serve immediately.
