White Chicken Chili

Not keto — just a cozy family favorite! Perfect for a cheat day or tweak it to fit your style.

Ingredients:

2 boneless chicken breasts

1 can corn (undrained)

1 can beans (I use red beans, rinsed)

1 packet chili seasoning

1 teaspoon cumin powder

1 packet ranch seasoning

1 tablespoon onion powder

1 block cream cheese

Instructions:

Place the chicken breasts in the crockpot.

Add the corn, beans, chili seasoning, cumin, ranch seasoning, and onion powder.

Place the block of cream cheese on top. Do not stir.

Cover with the lid and cook on high for 4 hours or low for 6 hours.

When done, shred the chicken, stir everything together, and mix well until creamy.

Serve warm with chips, sour cream, and shredded cheese on top.
