🌽 Mexican Street Corn White Chicken Chili
Ingredients (Serves 6)
- 1 tbsp olive oil
- 1 lb (450 g) chicken breast or thighs, cooked and shredded (rotisserie works great!)
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 (4 oz) can diced green chiles
- 1 (15 oz) can white beans, rinsed and drained (cannellini or great northern)
- 2 cups corn kernels (fresh, frozen, or canned)
- 3 cups chicken broth
- 1 cup milk or half-and-half
- 4 oz cream cheese, softened
- 1 tsp cumin
- 1 tsp chili powder
- ½ tsp smoked paprika
- Salt & pepper, to taste
- Juice of 1 lime
- ¼ cup chopped cilantro, for garnish
For topping (optional but amazing):
- Crumbled cotija or feta cheese
- Extra corn
- Fresh cilantro
- Chili powder or Tajín
- Lime wedges
👩🍳 Instructions
- Sauté aromatics:
Heat olive oil in a large pot over medium heat. Add onion and garlic, cook 3–4 minutes until soft. - Add seasonings:
Stir in cumin, chili powder, and smoked paprika. Cook 30 seconds to bloom the spices. - Add chicken and veggies:
Stir in shredded chicken, diced green chiles, white beans, and corn. - Add broth & simmer:
Pour in chicken broth. Simmer uncovered for 15–20 minutes, stirring occasionally. - Make it creamy:
Lower heat, add cream cheese and milk. Stir until smooth and creamy (don’t boil). - Finish & serve:
Add lime juice and adjust seasoning. Ladle into bowls, top with cotija, cilantro, and a sprinkle of chili powder.
