Servings: 4 | Prep Time: 15 mins | Cook Time: 15 mins | Total Time: 30 mins
🐔 Ingredients
For the Chicken Marinade:
- 2 chicken breasts (cut into strips)
- 2 tbsp olive oil
- 2 cloves garlic (minced)
- 1 tsp dried oregano
- 1 tsp paprika
- Juice of ½ lemon
- Salt and black pepper to taste
For the Wrap:
- 4 whole wheat or low-carb tortillas / wraps
- ½ cup Greek yogurt or tzatziki
- ½ cup shredded mozzarella or feta cheese
- ½ small red onion (thinly sliced)
- ½ cup baby spinach or arugula
- ½ cup chopped cucumber
- ½ cup diced tomatoes
- Optional: olives or roasted red peppers for extra flavor
🔥 Instructions
- Marinate the Chicken:
In a bowl, mix olive oil, garlic, oregano, paprika, lemon juice, salt, and pepper. Add chicken strips and let sit for 10–15 minutes (or longer if you can). - Cook the Chicken:
Heat a skillet over medium heat. Cook the chicken until golden and cooked through, about 6–8 minutes. Set aside. - Prepare the Wraps:
Warm tortillas slightly in a pan or microwave for easier folding. - Assemble:
Spread Greek yogurt or tzatziki over the wrap. Add a layer of spinach, tomatoes, cucumber, onions, and cooked chicken. Sprinkle with cheese. - Melt & Wrap:
Fold the wrap tightly. You can grill it in a pan for 1–2 minutes per side until the cheese melts and the outside is crispy. - Serve:
Slice in half and enjoy with extra yogurt sauce or hummus on the side.
💡 Tips
- For extra Mediterranean flair, add hummus or sun-dried tomatoes.
- Use grilled halloumi or feta instead of mozzarella for an authentic taste.
- These wraps are great for meal prep—just store the filling separately from the tortillas.
